Semolina cake with lemon syrup

It's a Greek cake and it can be served in the pan.
Ingredients:
4 large eggs
200 g sugar
500 g semolina
500 ml yogurt
100 g soft unsalted butter, plus extra for greasing
1⁄2 teaspoon baking soda
1 tablespoon brandy
1 tablespoon finely grated orange zest

Syrup:
200 ml water
300 g sugar
2 lemon

Preheat oven to 180°C/160°C fan-forced. Grease a cake pan. Line base and side with 2 layers of baking paper.
To make the cake, using an electric mixer on medium speed, beat all ingredients, except the eggs, for 2 minutes. Dissolve the baking soda in the brandy in a small cup and stir into the semolina mixture; add in the orange zest and stir to combine. Add eggs,1 at a time, beating between each addition, increase speed to high and beat for 5 minutes.
Scrape the cake batter into the prepared pan; smooth the top. Bake cake for about 30 minutes, or until it is well risen and deep golden.
Meanwhile, make lemon syrup: Place sugar, lemon juice and cold water in a saucepan over low heat. Cook for 5 minutes or until sugar has dissolved. Add lemon slices. Increase heat to high. Bring to the boil. Boil, without stirring, for 4 to 5 minutes or until mixture thickens.
When cake is cooked, pour a little hot syrup over cake, allowing it to absorb. Continue with all of syrup, allowing it to absorb after each addition.
You can serve with a cup of tee.

Tips: use a glass pan so the lemon syrup does not react with metal.

Have a wonderful week and thank you so much for reading!

Love, Nadejda!
